Bee Pollen Power Bites

Servings: 20-25 small-medium balls

Ingredients

  • 1 cup rolled oats
  • 1/2 cup nut or seed butter (try WOW butter for school lunch friendly)
  • 1/3 cup Dutchman’s Gold Summer Blossom honey
  • 1/2 cup chopped nuts or seeds (seeds for school lunch friendly)
  • 1/4 cup dried fruit
  • 1/4 cup shredded coconut
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/3 cup Dutchman’s Gold Bee Pollen

Directions:

  1. Mix oats, nut butter, honey, nuts/seeds, dried fruit, coconut, vanilla, and salt in a bowl.
  2. Chill mixture in the fridge for 30 mins.
  3. Roll into small balls.
  4. Roll balls in bee pollen.
  5. Chill on a baking sheet for 30 mins.
  6. Store in an airtight container in the fridge for up to 2 weeks. (freezer for 4 weeks)
