3 cups mixed vegetables
(carrots, broccoli, Brussels sprouts, cauliflower, bell peppers work beautifully)
1 Tbspdark maple syrup
1 TbspDijon mustard
2 Tbspolive oil
Salt & freshly ground black pepper, to taste
Preheat oven to400°F (200°C).
In a small bowl, whisk togethermaple syrup, Dijon mustard, and olive oil.
Toss vegetables with the maple Dijon mixture until evenly coated.
Season generously with salt and pepper.
Spread vegetables in a single layer on a lined baking tray.
Roast for 25–30 minutes, flipping once halfway, until tender and caramelized.
Serve warm as a side or over grains for a wholesome meal.
