Maple Dijon Roasted Vegetables

A simple, flavour-packed side that brings together sweet maple and tangy Dijon for perfectly caramelized vegetables.

Ingredients

  • 3 cups mixed vegetables

    (carrots, broccoli, Brussels sprouts, cauliflower, bell peppers work beautifully)

  • 1 Tbspdark maple syrup

  • 1 TbspDijon mustard

  • 2 Tbspolive oil

  • Salt & freshly ground black pepper, to taste

Instructions

  1. Preheat oven to400°F (200°C).

  2. In a small bowl, whisk togethermaple syrup, Dijon mustard, and olive oil.

  3. Toss vegetables with the maple Dijon mixture until evenly coated.

  4. Season generously with salt and pepper.

  5. Spread vegetables in a single layer on a lined baking tray.

  6. Roast for 25–30 minutes, flipping once halfway, until tender and caramelized.

  7. Serve warm as a side or over grains for a wholesome meal.

Tip: Finish with fresh thyme or a squeeze of lemon for extra brightness.
