No Bake Peanut Butter & Banana Energy Bites with Bee Pollen

Ingredients

  • ½ cup natural peanut butter
  • 1 banana chopped
  • 1 ½ cups old-fashioned oats
  • 2/3 cup small unsweetened shredded coconut
  • ¼ ground flaxseed
  • ½ cup dark chocolate finely chopped
  • 1/3 cup Dutchman's Gold Wildflower or Summer Blossom Honey
  • 2 tbsp Dutchman's Gold Bee Pollen

Directions:

  1. Combine all ingredients in a bowl. Using a fork, mask and stir until all ingredients are well combined. If you feel the consistency is a bit too sticky, add more oats as needed.
  2. Place the bowl in the refrigerator for about 30 minutes. This will help in creating the bites later.
  3. Remove the bowl from the refrigerator and roll "dough" into 1-inch sized balls.
  4. Keep bites refrigerated.
