Honey Cake

Ingredients

  • 8 oz. Dutchman's Gold Honey (Buckwheat Honey is our favourite!)
  • 2 eggs
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 2 1/2 cups flour
  • 1/2 cup strong coffee
  • 1 cup brown sugar
  • 3/4 cup Mazola oil
  • 1 tsp baking soda
  • Juice and rind of one orange
  • Raisins and chopped walnuts
Directions:
  1. Preheat oven to 350 degrees F (176 C).
  2. Mix honey and sugar. Add eggs and oil.
  3. Add juice, rind, and coffee alternately with sifted dry ingredients. Add raisins (about 1/2 cup).
  4. Grease and flour tube pan. Pour in batter. Top with walnuts.
  5. Bake for 60 minutes without opening oven door.
